Falafel kale wrap
with a beet and yoghurt dressing
Falafel is a typical recipe from the Middle Eastern cuisine and has chickpeas as its main ingredient. They're easy to make and full of protein! In this recipe, we present the falafel in a street food format - wrapped in a tortilla.

Instructions

Preheat the oven to 200 degrees.

Peel and finely chop the onion and garlic. Wash all the vegetables and separate the leaves from kale. Peel the beet, chop it and cook in boiling water for 8-10 minutes. Prick with a fork to check if it's soft in the centre. Turn off the heat, drain the water and let it cool down.

Drain and wash the chickpeas. Place the chickpeas, the onion, 1/3 of the kale, 1 clove of garlic, cumin and cayenne pepper in a mixing jar. Season to taste. Blend it with a hand blender to a paste. Add the chickpea flour, the baking powder and mix it with a spatula. Try the flavour and take pieces of the dough, the size of a walnut. Form balls with your hands. Place the falafel on a baking sheet with parchment paper and drizzle them with oil. Bake in the oven for 10-12 minutes until they take colour.

Place the beetroot, 1 garlic, the yoghurt, the juice of half a lemon and the mint leaves in a mixing jar. Season to taste. Blend all ingredients to a uniform cream.

Grate the carrot and chop the remaining kale leaves. Season with olive oil and the juice of half a lemon. Cut the cucumber into thin slices.
