Mallorcan almond soup
with lentil meatballs
This traditional soup from Mallorca is made of toasted almonds and seasonal vegetables. Originally served with pork meatballs and other pieces of meat, our vegan version replaces the meat by super easy and tasty lentil meatballs.

Instructions

Preheat the oven to 180 degrees.

Drain the water from the lentils and spread them over a baking tray with parchment paper. Bake them in the oven for 12 minutes. When ready, blend them to a smooth paste with a hand blender. Add a tablespoon of oil, the cumin and cinnamon powder, the nutritional yeast and a tablespoon of water. Season to taste. Form balls the size of a meatballs. In case the dough cracks, add some water, bit by bit, until it allows you to form the balls.

Wash all the vegetables. Peel the celeriac and chop it into small pieces. Peel the carrot and cut it into small pieces. Peel and chop the onion and leek. Chop the almonds. Dissolve the broth in 600ml of hot water.

Heat 2 tablespoons of olive oil in a pot and cook all the vegetables and the almonds for 5 minutes. Keep a handful of almonds aside to garnish the dish at the end. Add the flour and mix it together. Add the hot broth and bring it to a boil. Let it simmer for 15 minutes. Blend the vegetables to a smooth cream. If you want the soup to be very smooth, you can pass it through a sieve or fine strainer. Check the flavour and season to taste.

Heat 1 tablespoon of olive oil in a pan and sauté the meatballs for a few minutes until they slightly brown.
