Rice with red mojo

Mojo is a typical sauce from the Canary Islands made from fresh tomatoes, red pepper, onion and spices. In this colourful and tasty dish, you can enjoy it with vegetables and tofu egg.

Instructions

Wash all the vegetables. For the mojo: finely chop 1/4 of the pepper, the onion and 1 garlic clove. Grate the tomato. Heat a tablespoon of olive oil in a frying pan and sauté the onion, garlic and pepper with the cumin powder, paprika powder, tomato paste and salt to taste for 5 minutes. Add the tomato at the last-minute and cook it until the liquid evaporates. Place the sautéed vegetables in a mixing jar and blend it with a hand blender to a smooth paste.

To cook the rice: cut the zucchini and 1/4 of the pepper into cubes of 2cm. Cut the green beans into pieces of 3cm. Cut the mushrooms into quarters. Finely chop the garlic. Heat 1 tablespoon of olive oil in a medium-size pot and sauté the mojo for a few seconds. Add the rice and vegetables and sauté it for 30 seconds. Add 750ml of hot water and the vegetable broth. Cook everything for 15-20 minutes, while stirring occasionally, until the rice is tender. Season to taste. In case the liquid has completely evaporated, add some hot water. Add the whole cherry tomatoes at the very end.

For the egg: grate the tofu. Heat 1/2 tablespoon of oil in a frying pan and sauté the tofu with the turmeric powder for 1 minute. Season to taste.
