Baked wrap with cheese sauce
stuffed with sautéed spinach and soy bolognese

Instructions

Boil plenty of water in a pot and let the textured soy soak for 5 minutes. Drain the water and finely chop the soybeans.

Wash the vegetables. Peel and finely chop the onion, garlic and pepper. Heat 2 tablespoons of oil in a frying pan and sauté the vegetables for 3 minutes. Add the burger seasoning, the textured soy and the fried tomato sauce. Mix everything and let it cook for 2 minutes. Season to taste and set aside.

Sauté the spinach in a frying pan for a few seconds until it takes on an intense green colour. Remove from the pan, chop it and set aside.

For the cheese sauce: grate or finely chop the cheeses. Place the milk, cheeses, cornstarch and turmeric powder in a bowl or mixing jar. Blend everything with a hand blender until well-mixed. Place the soy cream in a small saucepan. Bring it to a boil and once it boils, add the milk and cheese mixture. Keep stirring until it starts to boil. Let it cook for 1 more minute to give the sauce its consistency.

To put the wrap together: spread the soy filling all over one side of the wrap. Cover it with a layer of spinach. Roll up the wrap while pressing it with your hands to make it firm. Heat a frying pan and close the wrap by searing it on the closing side of the wrap. Turn it around, so it gets nicely toasted on all sides. Remove from the pan and cut it in 8 pieces.
