Instructions

Use a colander or sieve to wash the red rice under running water until the water becomes transparent. Drain the water well and place the rice in a pot with 500ml of water. Bring it to a gentle boil and let it simmer for 20-25 minutes until tender.

Wash the vegetables. Peel the onion, celeriac and apple and roughly chop them. Heat 2 tablespoons of oil in a pot and sauté the vegetables for 5 minutes with salt to taste until they are softened. Add the long grain rice, honey, cayenne pepper powder (add it bit by bit, so you can make it to your desired spice level), the vegetable broth and the soy milk. Bring it to a gentle boil and let it simmer for 15 minutes. Blend it with a hand blender to a smooth cream. If necessary, add some water to make it thinner and give it the texture of a soup.
