Avocado, orange and cabbage salad
with whole-grain rigatoni pasta
In this tasty salad the fresh herb oil gives a nice touch to the pasta and the vegetables have an interesting acid flavour from the lemon.

Whole-grain rigatoni pasta
Fresh herb oil
Not included: olive oil, salt, pepper

Bring plenty of water to a boil in a pot and add salt to taste. Cook the paste for 8 minutes or until it's al dente. Drain the water and let the pasta cool down. Add the fresh herb oil and set aside.
Wash the vegetables. Chop the arugula. Peel the carrot and cut it into slices with a peeler or grate it finely. Cut the cabbage into thin strips. Peel the orange and cut it into wedges. Cut the onion into thin strips. Peel the avocado and cut it into slices. Place everything in a bowl and season it with the juice of the lemon. Mix it well and season to taste.
