Sweet potato and carrot patties
served with waldorf salad
These delicious vegetable patties have a touch of chickpea flour to obtain a firm texture and are accompanied by a classic salad recipe made of celery, apple, green leaves, walnuts and a yoghurt-lemon dressing.

Instructions
1.
Wash the vegetables. Peel the sweet potato and carrot and cut them into cubes of 1cm. Boil plenty of water in a pot and cook the vegetables for 10 minutes until tender. Drain the water well. Mash the vegetables with a fork to a rough puree. It can still contain some pieces of vegetable. Set aside.

Mix the chickpea- and rice flour in a bowl and add 150ml of water. Mix it together to a smooth paste. Add the vegetable puree and burger seasoning. Mix it together and optionally season. Let the mixture rest for 3 minutes.

For the salad: cut the celery into thin slices. Remove 1cm from the ends. Cut the apple into quarters, remove the core and cut it into thin slices. Chop the walnuts roughly. Prepare the dressing by mixing the yoghurt with the juice of half a lemon and optionally season. Mix all ingredients together with the green leaves and store in the fridge until the patties are ready.

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Take pieces of the dough, the size of a tennis ball, and crush them between your hands to form a patty of approximately 1cm thick. Fry the patties for 2 minutes on each side until golden brown. Turn off the heat and cover the pan with a lid to let them cook from the inside for another 2 minutes.
