Special black bean burger
with cheddar cheese and caramelised onion

Instructions
1.
Preheat the oven to 200 degrees.
2.
Wash the vegetables. Chop the mushrooms and sauté them in 1 tablespoon of oil until they take colour. Season to taste and set aside.

Drain and wash the beans. Blend the beans with a hand blender, while keeping some whole pieces of bean. Add the mushrooms, flour, burger seasoning and season to taste. Mix it well. Divide the dough in 2 pieces and make buns of them. Either squash them with the palm of your hand or use the base of a pot to give them a burger shape.

Wash the sweet potato. Peel it and cut it in half lengthwise and then into wedges of 1cm thick. They can also be cut in sticks. Place them in a bowl and add 2 tablespoons of oil and the cajun seasoning. Mix it well and spread them over a baking tray. Bake in the oven for 15 minutes until golden brown. Turn them around halfway through the baking time.

Peel the onion and cut it into thin strips. Heat 1 tablespoon of oil in a pan and sauté it over high heat. Once it starts to change colour, reduce the heat to a minimum and cook them until caramelised. Season to taste and set aside.

Cook the burgers on the same baking tray as the sweet potatoes for 7 minutes on each side. Drizzle them with some oil. When turning the burgers around, add the cheddar cheese slices on top and finish cooking.
