Boil plenty of water and add salt to taste. Place the noodles in the water and stir occasionally so they fall apart. Let it cook for approx. 4 minutes until they're ready. Drain the water, drizzle them with some oil and set aside. Reserve some of the cooking liquid in a cup for the sauce later.

Wash the vegetables. Chop the peanuts. Cut the tofu into cubes of 1cm. Cut the mushrooms into thin slices. Cut the tomato into small cubes. Finely chop the scallion and garlic.
