Red pepper stuffed with ragout
made from sautéed vegetables and soy meat

Instructions
1.
Preheat the oven to 150 degrees.
2.
Wash all the vegetables. Peel the onion and carrot. To peel the tomatoes, make a cross cut at the bottom and let them soak for 2 minutes in boiling hot water. Take them out of the water and remove the skin. Cut the red peppers in half lengthwise. Make sure not to break the structure while removing the stem and seeds. Chop the onion, celery, tomato and carrot as finely as possible.

Put the textured soy with half of the spices in a bowl and cover them in water of 80 degrees (almost boiling). Let them hydrate for 10 minutes.

Brush the peppers with oil and place them in an oven dish. Bake them for 10 minutes at 150 degrees.

Heat half a tablespoon of oil in a medium-size saucepan. Add the chopped vegetables, except for the tomatoes and cook over medium heat for 10 minutes. Add the chopped tomatoes and the remaining half of the spices.

Drain the textured soy and cut them into small pieces.
7.
Add the textured soy and tomato sauce to the vegetable ragout. Let it cook over medium to high heat for 5-8 minutes until it has become a thick sauce.
8.
Remove the peppers from the oven, fill them with the ragout and sprinkle them with nutritional yeast. Bake in the oven for another 10 minutes.
